Oatmeal Banana Pancakes

This is my go-to recipe for pancakes when I have lots of ripe bananas. Kids enjoy them with maple syrup or chocolate spread (or both), and plenty of fruits (mostly blueberries, strawberries, sliced bananas). This recipe makes about 10-15 good size pancakes.  

  • 5 cups rolled oats
  • 3 cups milk
  • 5-6 ripe medium bananas
  • 1 large egg
  • 3 tspn vanilla essence
  • 3 tbspn baking powder
  • 1 tspsn ground cinnamon
  • ½ tspn salt
  • Butter or oil (for cooking)


  1.         Place all the ingredients given above into a blender. I use my Vitamix and blend it till almost smooth. Let the mix sit for 5-10 mins, this is when the blend will get thicker due to the oats. 
  2.        Heat a griddle or pan, and spread some butter, pour enough pancake mix for one. As the pancakes cooks, you will notice small pores, this is when you know it is ready to be turned. Flip to the other side, and remember this side will cook much faster.
  3.         This batter can be saved in the fridge for making fresh pancakes for up to a week or so. You can also freeze cooked pancakes, just thaw and reheat to enjoy it later
